Climate Conscious Christmas Dinner

A Swedish food expert says the debate over climate change may change the traditional Swedish Christmas dinner.

Richard Tellström, a researcher at Örebro University’s school of Culinary Arts and Meal Science, says Christmas dinner in Sweden has changed since the mid-70’s from a feast to more of a buffé, with more pre-prepared dishes.

He tells the TT news agency that where previously there was such an abundance that much food was thrown away, now concern for the climate is leading to a chance in eating habits.
