This year Swedes are expected to set a new record in egg consumption. The big increase is in ecological eggs, says Tommy Andersson, the assistant manager of the Hemköp supermarket at Torsplan in Stockholm.
“What we’ve had problems with are ecological eggs,” he tells Swedish Radio News. “That’s the segment that has increased most, but we’ve managed to get the numbers we need.”
Meanwhile, chicken consumption is on the rise as well, nearly doubling in the past 15 years. Although, as Harald Svensson of the Swedish Board of Agriculture tells Swedish Radio News, production has not kept pace.
“We’ve increased our consumption very much he says. But “that’s resulted in our eating more imported chicken today than 15 years ago.”
