Oatmeal Cookies with Walnuts and Raisins (Havrekakor med valnötter och russin)

These delicious cookies are both healthy and a tasty treat for the cold winter months.

What you need:

200 grams room temperature butter or margarine
1 dl           sugar
2.5 dl        brown sugar
1              egg
2              tablespoons water
2 dl          flour
1 tsp        cinnamon
1 tsp        vanilla sugar
1 pinch of salt
0.5 tsp     baking soda
7 dl         oatmeal
2 dl         raisins
2 dl         walnuts (roughly chopped)

What to do:

Preheat the oven to 175C

In a large bowl combine the butter, sugar and brown sugar. Mix until moist and well combined. Then add the egg and water. Mix again.

In a separate bowl combine the flour, cinnamon, vanilla sugar, salt and baking powder. Mix well, and then add the combination to the wet ingredients slowly. Then add the oatmeal, raisins and chopped walnuts, mixing one last time.

Take a tablespoon and scoop a spoonful of the mixture on a greased (or line) baking sheet.

Bake for approximately 12 minutes. The cookies should still be soft when you remove them from the oven.

Cool, serve and enjoy.
